Freezing Fresh Produce

Sometimes, the bounty of a summer harvest is just too much of a good thing.

CSA member and newsletter editor Michele Decoteau discovered a great Web site for anyone interested in freezing their produce:

rutabagas in paradise

How could you not like a Web site called Vegetarians in Paradise? There’s a nice, easy introduction to rutabagas, with nutritional info and directions for cooking, including the recipe below:

RUTABAGAS IN THE ROUGH

4 large rutabagas
1/4 t. salt
Water
1 T. extra-virgin olive oil
Dash of nutmeg
Salt and pepper to taste

Peel rutabagas with a vegetable peeler, and cut into chunks. Put them into a 4-quart (4 liter) saucepan, add the salt and about 2″ (5 cm) of water to cover. Cover saucepan, and bring to a boil over high heat.

Turn heat down to medium and cook about 12 – 15 minutes, or until fork tender. Drain, reserving cooking liquid. Using a potato masher, coarsely mash rutabagas in the saucepan, adding cooking liquid as needed for moisture.

Add olive oil and nutmeg. Season to taste with salt and pepper. Transfer to a serving bowl, sprinkle with a dash of nutmeg, and garnish with a sprig of fresh sage or herb of your choice. Serves 6.

Purslane

This spring we included a bunch of purslane in the share boxes. Recently I stumbled across this article on purslane that I thought was worth sharing http://gourmetfood.suite101.com/article.cfm/purslane_the_best_vegetable_youve_never_had . I used to sell purslane in my mix of produce at Farmers Market, but because of the tepid response from my customers didn’t worry too much about making sure it made it on the truck. But after this article, which echoed what I understood about purslane’s benefits, I decided to add it back to my market mix.

I will be adding it back into the share boxes from time to time also, if for no other reason then to take the opportunity to continue to stand on the growers’ soap box and preach about good food and good cooking!

Personally, I had always eaten purslane raw in salads, but a recent customer in Worcester told me that it is wonderful sauteed with garlic and other greens. Another customer squealed with delight and declared that purslane was the basic ingredient in salads when she was growing up (somewhere in Europe) and that she was so excited to find a source of it once again.

So, the next bunch of purslane in your box will hopefully elicit excitement and a quick google for recipes.
